Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 0.75 cup brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1.5 cups blueberries, fresh or frozen
  • 1 tablespoon lemon juice
  • 1.5 tablespoons cornstarch

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, baking powder, cinnamon, and salt. Stir until well mixed.

Step 3

Add the melted coconut oil and vanilla extract to the dry ingredients. Stir until the mixture resembles coarse crumbs.

Set aside about 3/4 cup of the oat mixture for the topping.

Press the remaining oat mixture firmly into the bottom of the prepared baking dish to form an even layer.
