Ingredients

  • 1 package Dairy-free puff pastry sheets
  • 1.5 cups Fresh blueberries
  • 0.25 cup Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Vanilla extract
  • 1 tablespoon Almond milk
  • 0.5 cup Powdered sugar

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a small saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.

Step 3

Stir the mixture frequently and cook until the blueberries start to burst and the mixture thickens to coat the back of a spoon, about 5-7 minutes. Let it cool.

Unroll the dairy-free puff pastry sheets and cut them into 8 equal rectangles. Place them on the prepared baking sheet.

Step 5

Using a sharp knife, lightly score a small border about 0.5 inch (1 cm) from the edge of each rectangle. Be careful not to cut all the way through.

Spoon about 2 tablespoons of the blueberry mixture into the center of each rectangle, spreading it evenly within the scored border.
