Ingredients

  • 2 whole Bagels
  • 1 tablespoon Coconut oil or olive oil
  • 4 pieces Vegan bacon strips
  • 1 whole Ripe avocado
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 large leaves Romaine lettuce leaves
  • 1 medium, sliced Tomato

Directions

Step 1

Slice each bagel in half and set aside.

Step 2

In a medium skillet, heat 1 tablespoon of coconut oil or olive oil over medium heat.

Step 3

Add the vegan bacon strips to the skillet and cook for about 2-3 minutes per side or until they are crispy and golden brown. Remove from the skillet and set aside.

Step 4

While the bacon is cooking, prepare the avocado spread. In a bowl, scoop out the flesh of the avocado and mash it with a fork.
