Ingredients

  • 500 grams Dairy-free puff pastry
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 200 grams, diced Mushrooms
  • 150 grams, fresh Spinach
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Almond milk
  • 100 grams, grated Dairy-free cheese

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic and diced mushrooms to the pan. Continue to cook, stirring occasionally, until the mushrooms are soft and any liquid has evaporated, about 5 minutes.

Step 4

Add the fresh spinach to the mushroom mixture and cook until wilted, about 2 minutes.

Step 5

Season the filling with salt, black pepper, and nutmeg. Stir well and remove the pan from heat. Allow the mixture to cool slightly.

Roll out the puff pastry on a lightly floured surface until it is about 3 mm thick. Cut the pastry into 8 cm squares.
