Ingredients

  • 1 cup Chickpea flour (Besan)
  • 0.75 cup Water
  • 1 medium Red onion, finely sliced
  • 1 medium Potato, peeled and sliced thin
  • 1 cup Spinach leaves, chopped
  • 1 small Green chili, finely chopped
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.25 teaspoon Baking powder
  • 2 tablespoons Cilantro, chopped
  • 2 cups Oil, for frying

Directions

Step 1

In a large mixing bowl, add chickpea flour, ground cumin, red chili powder, turmeric powder, salt, and baking powder.

Step 2

Gradually add water to the dry ingredients, stirring constantly to form a smooth, lump-free batter.

Step 3

Add the sliced onion, potato, chopped spinach, green chili, grated ginger, minced garlic, and chopped cilantro to the batter. Mix well to ensure all the ingredients are evenly coated.

Step 4

Heat oil in a deep frying pan over medium heat. Test if the oil is ready by dropping a small amount of batter into the oil. If it sizzles and rises to the surface, the oil is ready for frying.

Step 5

Carefully drop spoonfuls of the batter into the hot oil, being mindful not to overcrowd the pan. Fry the bhajias in batches if necessary.

Step 6

Fry the bhajias until they are golden brown and crispy on the outside, about 4-5 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels to remove excess oil.

Step 7

Repeat the frying process with the remaining batter.

Step 8

Serve the dairy-free bhajias hot with your choice of chutney or sauce.
