Begin by finely chopping the cashew nuts, almonds, and pistachios. Set them aside for later use.
In a heavy-bottomed pan, heat the coconut oil on medium-low heat.
Add the chickpea flour (besan) to the pan with the heated coconut oil. Stir continuously, roasting the flour for about 15-20 minutes until it turns golden brown and emits a rich, nutty aroma. Make sure to stir constantly to avoid burning.
While the flour is roasting, open the cardamom pods and crush the seeds using a mortar and pestle to release the flavor.
Once the flour is roasted, remove the pan from the heat and let it cool slightly. This will take about 5-10 minutes.
Once slightly cooled, add the powdered sugar to the roasted flour mixture. Mix thoroughly to combine.
Add the crushed cardamom seeds, chopped nuts, and raisins to the besan mixture. Mix well until all ingredients are evenly incorporated.
As the mixture cools further, it will become easier to handle. Take small portions of the mixture in your hands and shape them into round balls to form laddoos.
If the mixture is too crumbly to form into balls, you can add a little more coconut oil to help bind it.
Place the prepared laddoos on a platter and allow them to set for at least 30 minutes before serving.
Store any leftover laddoos in an airtight container at room temperature for up to a week.
