  • 1 14-ounce can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 cup berkoukes (large grain couscous)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh parsley
  • 2 tablespoons fresh lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté for about 5 minutes, until softened.
