Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 small carrots, peeled and thinly sliced
  • 1 medium celery stalk, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons low-sodium soy sauce
  • 8 cups vegetable broth
  • 2 cups water
  • 2 tablespoons scallions, chopped
  • 1 cup mushrooms, thinly sliced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup fried onions for garnish (optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the thinly sliced onion, carrots, and celery to the pot. Cook until the vegetables are tender and the onion is translucent, about 5 minutes.

Step 3

Stir in the minced garlic and ginger, and sauté for an additional 1 minute until fragrant.

Step 4

Add the soy sauce to the vegetables and stir to combine.

Step 5

Pour in the vegetable broth and water, and bring the mixture to a boil over high heat.

Step 6

Once boiling, reduce the heat to low and let the soup simmer uncovered for 20 minutes. Stir occasionally to allow the flavors to meld.

Step 7

Add the chopped scallions and thinly sliced mushrooms to the pot. Season with salt and black pepper.

Step 8

Continue to simmer for another 5 minutes until the mushrooms are just tender.

Step 9

Taste the soup and adjust the seasoning as needed.

Step 10

Ladle the soup into bowls and top with the optional fried onions for an extra crunch.

Step 11

Serve hot and enjoy your dairy-free Benihana onion soup!
