Ingredients

  • 1 cup Coconut cream
  • 0.5 cup Coconut milk
  • 0.75 cup Sugar
  • 1 cup Grated unsweetened coconut
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 20 pieces Cloves
  • 0.5 cup Grated unsweetened coconut (for rolling)

Directions

Step 1

In a medium saucepan, combine the coconut cream, coconut milk, and sugar over medium heat.

Step 2

Stir the mixture continuously to dissolve the sugar and prevent it from sticking to the bottom of the pan.

Step 3

Once the mixture begins to simmer, add 1 cup of grated unsweetened coconut and continue to stir.

Step 4

Add coconut oil and vanilla extract to the simmering mixture, and keep stirring until it thickens, about 15-20 minutes. The mixture should start pulling away from the sides of the pan.

Step 5

Remove from heat and let the mixture cool to room temperature, which will make it easier to handle.

Once cooled, grease your hands slightly with coconut oil to prevent sticking and take about a tablespoon of the mixture to form small balls.

Roll each ball in the additional 0.5 cup of grated unsweetened coconut to coat.
