Ingredients

  • 4 medium beetroots
  • 170 grams dairy-free feta cheese
  • 120 grams mixed salad greens
  • 50 grams walnuts
  • 10 grams fresh mint leaves
  • 3 tablespoons extra virgin olive oil
  • 1.5 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F).

Wash the beetroots thoroughly, then wrap each one individually in aluminum foil.

Place the wrapped beetroots on a baking tray and roast in the preheated oven for approximately 45 minutes or until tender (check by inserting a knife).
