  • 0.25 teaspoon saffron threads, crushed
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 3 medium carrots, peeled and cut into 2-inch pieces
  • 1 large sweet potato, peeled and cut into chunks
  • 0.5 cup dried apricots, halved
  • 1 15-ounce can chickpeas, drained and rinsed
  • 2 tablespoons lemon juice
  • 0.25 cup fresh cilantro, chopped
  • 0.25 cup slivered almonds, toasted

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or tagine over medium-high heat.

Season the beef cubes with salt and black pepper.

Brown the beef in batches, adding more oil as necessary, until all sides are seared; remove and set aside.
