  • 2 tablespoons Olive oil
  • 1 large Onion, finely chopped
  • 2 medium Carrots, finely chopped
  • 2 Celery stalks, finely chopped
  • 4 Garlic cloves, minced
  • 1 pound Ground beef
  • 2 tablespoons Tomato paste
  • 1 cup Red wine
  • 28 ounces Canned crushed tomatoes
  • 2 Bay leaves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 pound Cooked pasta or polenta, for serving

Directions

Step 1

Heat the olive oil in a large, heavy-based pot over medium heat.

Add the chopped onion, carrots, and celery to the pot and sauté for about 8-10 minutes or until the vegetables are softened and the onion is translucent.
