  • 4 large flour tortillas (dairy-free)
  • 1 avocado
  • 1 lime, juiced
  • 0.25 cup fresh cilantro, chopped
  • 1 cup dairy-free cheese shreds
  • 0.5 cup salsa (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced onion and red bell pepper, and sauté for about 5 minutes until the vegetables are soft.

Step 2

Add minced garlic to the skillet and cook for another minute until fragrant.

Step 3

Add ground beef to the skillet, breaking it up with a spoon, and cook until browned, around 7-8 minutes.

Mix in the ground cumin, chili powder, salt, and black pepper, ensuring the beef is well coated with the spices. Remove from heat and set aside.
