Ingredients

  • 1000 grams Beef Chuck, cubed
  • 2 tablespoons Olive Oil
  • 1 Large Onion, diced
  • 3 large Carrots, sliced
  • 2 Celery Stalks, chopped
  • 3 Garlic Cloves, minced
  • 4 medium Russet Potatoes, peeled and sliced
  • 750 ml Beef Broth
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Rosemary, dried
  • 2 Bay Leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoons Fresh Parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the cubed beef in batches, searing until all sides are browned. Remove the beef from the pot and set aside.

Step 2

Add the remaining tablespoon of olive oil to the pot. Add the diced onion, sliced carrots, and chopped celery. Cook for about 5 minutes or until the onions become translucent.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Return the browned beef to the pot. Add the sliced russet potatoes, beef broth, tomato paste, thyme, rosemary, and bay leaves. Stir well to combine.
