  • 1 pound beef chuck
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 garlic cloves
  • 3 medium carrots
  • 2 celery stalks
  • 4 medium potatoes
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen green peas

Directions

Step 1

Cut the beef chuck into 1-inch cubes and season with salt and pepper.

Step 2

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the beef cubes in batches, browning on all sides. Remove the beef and set aside.

Peel and dice the onion, then mince the garlic cloves. Add the remaining tablespoon of olive oil to the pot. Add the onion and garlic, sautéing until the onion becomes soft and translucent.

Peel and slice the carrots, and chop the celery stalks. Add them to the pot and cook for about 5 minutes, stirring occasionally.
