Ingredients

  • 1 lb beef chuck, cut into 1-inch cubes

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.25 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp tomato paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • 2 large carrots, cut into 1/2-inch pieces
  • 2 medium potatoes, cut into 1/2-inch cubes
  • 1 cup frozen peas
  • 1.5 cups basmati rice
  • 3 cups water
  • 0.25 cup fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove from the pot and set aside.

In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes.
