  • 3 pounds Beef chuck roast
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 1 medium White onion, diced
  • 4 Garlic cloves, minced
  • 2 tablespoons Chipotle peppers in adobo sauce, chopped
  • 1 cup Beef broth
  • 2 tablespoons Apple cider vinegar
  • 3 tablespoons Lime juice
  • 2 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 0.25 teaspoon Ground cloves
  • 2 Bay leaves

Directions

Step 1

Trim any excess fat from the beef chuck roast, then cut it into large chunks.

Step 2

Season the beef chunks with salt and black pepper on all sides.

Step 3

Heat the vegetable oil in a large skillet over medium-high heat.

Sear the beef chunks in batches for about 3-4 minutes on each side until browned. Transfer the browned beef to a slow cooker.
