  • 10 pieces corn tortillas
  • 2 tablespoons olive oil
  • 1 cup, shredded dairy-free cheddar cheese
  • 1 small, diced red bell pepper
  • 0.5 cup, fresh or frozen corn kernels
  • 0.75 cup coconut milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Heat a large skillet over medium heat. Add the ground beef and cook for 5-7 minutes, breaking it apart with a wooden spoon, until it's fully browned.

Step 2

Add the diced onion and minced garlic to the skillet with the beef. Cook for an additional 3 minutes until the onion softens.

Step 3

Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to incorporate all the spices with the beef.

Add the diced red bell pepper and corn kernels to the skillet. Cook for another 2-3 minutes, stirring occasionally, until the bell pepper is tender.
