Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef chuck
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large onion, chopped
  • 3 cloves garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 3 medium beetroot, peeled and diced
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 1 bay leaf
  • 2 tablespoons fresh dill, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Season the beef chuck with salt and black pepper.

Step 2

Add the seasoned beef to the pot and brown it on all sides, about 5-7 minutes. Remove the beef and set aside.

In the same pot, add the remaining 1 tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 5 minutes.
