Ingredients

  • 4 pieces large tortillas
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned pinto beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 0.5 medium red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 medium avocado, sliced
  • 0.25 cup fresh cilantro, chopped
  • 1 tablespoon coconut oil
  • 1 medium lime, cut into wedges
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the coconut oil in a large skillet over medium heat.

Step 2

Add the diced red bell pepper, red onion, and minced garlic to the skillet. Sauté for 3-4 minutes, until the vegetables are softened.

Stir in the black beans and pinto beans, followed by the cumin, paprika, salt, and black pepper. Cook for another 4-5 minutes, stirring occasionally, to combine and heat through.
