Ingredients

  • 300 grams bean sprouts
  • 4 cups vegetable broth
  • 1 tablespoon ginger
  • 2 garlic cloves
  • 1 medium carrot
  • 4 green onions
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 200 grams tofu
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro

Directions

Step 1

Rinse the bean sprouts thoroughly under cold water and set aside to drain.

Step 2

Finely chop the ginger and garlic cloves. Peel and thinly slice the carrot. Chop the green onions, separating the white and green parts.

Step 3

Dice the tofu into small cubes.

Step 4

In a large pot, heat the sesame oil over medium heat. Add the ginger, garlic, and the white parts of the green onions. Sauté for about 2 minutes, or until fragrant.

Step 5

Add the sliced carrot to the pot and continue to sauté for another 2 minutes.

Step 6

Pour in the vegetable broth and bring it to a simmer.

Add the diced tofu and continue to simmer for 5 minutes.

Stir in the soy sauce, salt, and black pepper.

Add the bean sprouts and simmer for another 3-4 minutes, until the bean sprouts are tender yet still slightly crunchy.

Remove the pot from heat and stir in the green parts of the green onions.
