Ingredients

  • 250 grams rice vermicelli sheets
  • 5 stalks scallions
  • 4 tablespoons vegetable oil
  • 2 tablespoons water
  • 2 tablespoons fish sauce
  • 2 teaspoons sugar
  • 3 cloves garlic
  • 1 medium red chili
  • 2 tablespoons lime juice
  • 1 head lettuce leaves
  • 1 bunch fresh herbs (mint, cilantro, basil)

Directions

Step 1

Bring a large pot of water to boil over high heat.

Step 2

Once boiling, remove the pot from heat and submerge the rice vermicelli sheets for 3-4 minutes until they are soft but not mushy.

Step 3

Drain the vermicelli sheets and rinse them under cold water to stop the cooking process. Set them aside.

Step 4

Finely chop the scallions and separate the white and green parts.

Step 5

In a small saucepan, heat 4 tablespoons of vegetable oil over medium heat.

Step 6

Add the white part of the scallions to the oil and sauté for 1-2 minutes until fragrant.

Step 7

Remove the saucepan from heat and stir in the green parts of the scallions. Set this scallion oil aside.

Step 8

In a small bowl, mix the water, fish sauce, sugar, minced garlic, chopped red chili, and lime juice to create a dipping sauce.

Step 9

To serve, lay out the cooked rice vermicelli sheets on a serving platter.

Step 10

Brush the scallion oil over the tops of the vermicelli sheets.

Step 11

Separate lettuce leaves and rinse them along with the fresh herbs.

Step 12

Arrange the lettuce leaves and herbs alongside the Banh Hoi.

Step 13

Serve immediately, allowing each person to wrap the vermicelli and herbs in the lettuce leaves, dipping in the sauce as they eat.
