Ingredients

  • 8 pieces Dairy-free sausages
  • 2 tablespoons Olive oil
  • 2 pounds Potatoes
  • 1 cup Unsweetened almond milk
  • 4 tablespoons Dairy-free butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Onion
  • 2 cloves Garlic
  • 1 cup Vegetable broth
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Thyme
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Peel and chop the potatoes into large chunks.

Step 2

Place the potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer. Cook until potatoes are tender, about 15-20 minutes.

Step 3

While the potatoes are cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the dairy-free sausages to the skillet and cook until browned on all sides, about 8-10 minutes. Remove sausages from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium. Add the onion, finely chopped, and sauté until soft and translucent, about 5 minutes.
