Ingredients

  • 150 grams Almond flour
  • 60 grams Coconut oil
  • 3 tablespoons Maple syrup
  • 1 teaspoon Salt
  • 4 medium Bananas
  • 2 tablespoons Lemon juice
  • 400 milliliters Canned coconut cream
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Cornstarch
  • 1 tablespoon Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium-sized bowl, mix the almond flour, melted coconut oil, maple syrup, and salt until well combined and crumbly.

Step 3

Press the almond flour mixture into the bottom of a 9-inch tart pan, ensuring an even thickness across the base and up the sides.

Step 4

Bake the crust for 10–12 minutes, or until it is lightly golden. Remove from the oven and let it cool slightly.

Peel and slice three of the bananas and place them in a blender or food processor.

Add the lemon juice, coconut cream, vanilla extract, and cornstarch to the bananas and blend until smooth and creamy.
