Ingredients

  • 500 g ground beef
  • 4 garlic cloves, minced

  • 4 large ice cubes
  • 50 g tapioca flour
  • 1 tsp salt
  • 1 tsp white pepper
  • 1.5 L beef stock
  • 2 chopped celery stalks
  • 2 spring onions, sliced
  • 2 tbsp soy sauce
  • 200 g thin rice noodles
  • 3 tbsp fried shallots
  • 1 handful fresh coriander leaves
  • 200 g bok choy, chopped

Directions

Step 1

Start by preparing the meatball mixture. Place the ground beef, minced garlic, egg whites, large ice cubes, and tapioca flour into a food processor.

Step 2

Add the salt and white pepper to the mixture. Blend until the mixture becomes a smooth paste.

Step 3

To form the meatballs, moisten your hands with water and scoop up small amounts of the beef mixture. Shape into balls, about 1 inch in diameter.

Bring a pot of water to a gentle boil. Drop the meatballs into the water and cook until they float to the top and are firm, about 5–7 minutes. Remove with a slotted spoon and set aside.
