Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Dairy-free sour cream
  • 0.25 cup Fresh chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Clean the potatoes thoroughly under running water and pat them dry with a kitchen towel.

Step 3

Use a fork to prick each potato several times which allows steam to escape while baking.

Step 4

Rub each potato with olive oil, ensuring they’re coated evenly. Sprinkle salt and pepper over the potatoes to season them.

Step 5

Place the potatoes directly on the oven rack and bake for 50-60 minutes. They are ready when the skin is crispy and a fork easily pierces the flesh.

Step 6

While the potatoes are baking, rinse and chop the fresh chives into small pieces. Set aside.

Step 7

Once baked, carefully remove the potatoes from the oven using oven mitts.

Step 8

Cut a slit lengthwise across the top of each potato. Gently squeeze the ends towards each other to open up the potato.

Step 9

Top each potato with a generous dollop of dairy-free sour cream.

Step 10

Sprinkle fresh chives over the sour cream.

Step 11

Serve immediately while hot for the best flavor and texture.
