Ingredients

  • 4 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 stalks green onions
  • 2 tablespoons nutritional yeast
  • 0.5 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the potatoes thoroughly under running water and pat them dry with a towel.

Step 3

Pierce each potato several times with a fork to allow steam to escape during baking.

Step 4

Rub each potato with olive oil, ensuring they are evenly coated, then season with salt and black pepper.

Step 5

Place the potatoes directly on the oven rack and bake for 60 minutes, or until the skins are crispy and the potatoes are tender when pierced with a fork.

Step 6

While the potatoes are baking, wash the green onions and chop them finely, separating the white and green parts.

Step 7

In a small bowl, mix together the chopped green parts of the onions, nutritional yeast, garlic powder, lemon juice, and chopped parsley. Set aside.

Step 8

Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes.

Step 9

Using a sharp knife, make a lengthwise slit in the top of each potato and gently squeeze the ends to open them up.

Step 10

Fluff the insides of the potatoes with a fork and evenly distribute the green onion mixture over the open potatoes.

Step 11

Sprinkle the white parts of the green onions on top for added crunch and flavor.

Step 12

Serve immediately, and enjoy your dairy-free baked potato with green onions!
