Ingredients

  • 4 whole large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 6 slices bacon
  • 3 stalks green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the russet potatoes thoroughly under running water. Pat them dry with a towel.

Step 3

Pierce each potato several times with a fork to allow steam to escape during baking.

Step 4

Rub each potato with olive oil and sprinkle sea salt evenly over the skins.

Step 5

Place the potatoes directly on the oven rack or on a baking sheet. Bake them for 50-60 minutes, or until the skins are crispy and the insides are tender when pierced with a fork.

Step 6

While the potatoes are baking, cook the bacon slices in a skillet over medium heat until they are crispy.

Step 7

Remove the cooked bacon from the skillet and place it on a plate lined with paper towels to drain excess fat. Once cooled, crumble the bacon into small pieces.

Step 8

Slice the green onions thinly and set them aside.

Step 9

Once the potatoes are done baking, remove them from the oven and allow them to cool slightly for about 5 minutes.

Step 10

Cut each potato lengthwise without cutting all the way through, then gently press the ends towards each other to open up the potato slightly.

Step 11

Fluff the insides of the potatoes with a fork and season with salt and pepper to taste.

Step 12

Top each baked potato with a generous amount of crumbled bacon and sliced green onions.

Step 13

Serve the dairy-free baked potatoes immediately while they are warm and enjoy!
