Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • 1 medium, chopped red bell pepper

  • 10 pieces, chopped fresh basil leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 16 pieces toothpicks
  • 1 cup non-dairy breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to about 1/4-inch thickness.

In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
