  • 1 small ripe avocado
  • 6 pieces cherry tomatoes
  • 1 cup baby spinach

Directions

Step 1

Begin by cooking the dairy-free bacon. Heat a non-stick skillet over medium heat and add the bacon slices. Cook for 4-5 minutes on each side, or until crispy. Remove and place on paper towels to drain excess oil.

In a bowl, whisk the eggs together with the almond milk, salt, and black pepper until well combined.
