Ingredients

  • 4 slices Bacon strips
  • 2 large Eggs
  • 1 medium Avocado
  • 1 teaspoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Bread rolls (dairy-free)
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

Add the bacon slices to the skillet. Cook for 6-8 minutes, flipping halfway through until crispy. Remove from the skillet and place on a paper towel to absorb excess grease.

While the bacon is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, half of the salt, and pepper. Mash with a fork until smooth. Set aside.

Carefully wipe the skillet clean with a paper towel. Add olive oil to the skillet and return to medium heat.
