Ingredients

  • 2 pieces English muffin
  • 2 slices Dairy-free cheese slices
  • 4 strips Bacon strips
  • 2 large Eggs
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 small Avocado (optional)
  • 0.5 cup Spinach leaves (optional)

Directions

Step 1

Preheat a skillet over medium heat. Add the bacon strips and cook until crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Step 2

While the bacon is cooking, split and toast the English muffins until golden brown.

Step 3

In the same skillet, add olive oil and crack the eggs into the skillet. Sprinkle with salt and pepper. Cook for about 2-3 minutes until the whites are set and the yolks are cooked to your preference. For over-easy eggs, carefully flip and cook for another minute.
