Ingredients

  • 8 pieces Chicken drumsticks
  • 4 cloves Garlic cloves
  • 5 pieces Shallots
  • 1 inch Fresh ginger
  • 1 inch Fresh turmeric
  • 1 stalk Lemongrass stalk
  • 2 tablespoons Chili powder
  • 1 tablespoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Ground fennel seeds
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 cup Rice flour
  • 1 tablespoon Cornstarch
  • 1 cup Water
  • 2 cups Vegetable oil

Directions

Step 1

Peel the garlic, shallots, ginger, and turmeric. Roughly chop them with the lemongrass.

Step 2

In a blender, combine the garlic, shallots, ginger, turmeric, and lemongrass. Blend until a smooth paste forms.

Step 3

In a large mixing bowl, combine the blended paste with chili powder, coriander powder, cumin powder, ground fennel seeds, salt, and black pepper.

Step 4

Add the chicken drumsticks to the bowl and mix well to ensure the chicken is evenly coated with the spiced paste. Cover and let marinate for at least 1 hour, preferably overnight in the refrigerator for maximum flavor.

Step 5

After marinating, mix the rice flour and cornstarch in a separate bowl, then add enough water to form a thick, smooth batter.

Step 6

Heat the vegetable oil in a deep pan or wok over medium-high heat until it reaches frying temperature (about 350°F or 175°C).

Step 7

Dip each marinated chicken drumstick into the rice flour batter, ensuring it is fully coated.

Step 8

Carefully place the coated chicken in the hot oil. Fry in batches, if necessary, to prevent overcrowding.

Step 9

Fry the chicken for approximately 10-12 minutes, turning occasionally, until golden brown and crispy on all sides. Ensure the chicken is cooked through.

Step 10

Remove the fried chicken from the oil and drain on paper towels to remove excess oil.

Step 11

Serve the Ayam Goreng Berempah hot with steamed rice or your favorite dipping sauce.
