Ingredients

  • 6 pieces chicken drumsticks
  • 2 stalks lemongrass stalks
  • 5 pieces shallots
  • 4 cloves garlic cloves
  • 3 pieces candlenuts or macadamia nuts
  • 1 teaspoon turmeric powder
  • 1 inch galangal root
  • 1 teaspoon coriander seeds
  • 3 leaves lime leaves
  • 1 teaspoon salt
  • 1 tablespoon coconut sugar
  • 500 milliliters water
  • 500 milliliters vegetable oil

Directions

Step 1

Remove the tough outer layers of the lemongrass and cut into 1-inch pieces.

Step 2

Peel the shallots and garlic.

Step 3

In a blender, combine lemongrass, shallots, garlic, candlenuts, turmeric, galangal, and coriander seeds. Blend to form a smooth paste. Add a bit of water if necessary to help blending.

In a large bowl, mix the paste with the chicken drumsticks until well coated. Let it marinate for 15-30 minutes for more flavor.

In a large pot, add the marinated chicken and pour in 500ml of water. Add the lime leaves, salt, and coconut sugar.
