Ingredients

  • 2 whole ripe avocados
  • 1 tablespoon fresh lemon juice
  • 1 cup cherry tomatoes
  • 10 leaves fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • 4 slices whole grain or sourdough bread
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the avocados in half and remove the pits. Scoop the flesh into a bowl and add the fresh lemon juice. Mash with a fork until smooth but still slightly chunky.
