Ingredients

  • 1 cup Flattened rice (poha/aval)
  • 2 cups Coconut milk
  • 0.5 cup Water
  • 0.75 cup Jaggery
  • 0.5 teaspoon Cardamom powder
  • 2 tablespoons Cashew nuts
  • 1 tablespoon Raisins
  • 1 tablespoon Coconut oil

Directions

Step 1

Rinse the flattened rice (poha/aval) under running water and drain the excess water. Set aside for a few minutes to allow it to soften.

Step 2

In a saucepan, add 0.5 cups of water and the jaggery. Heat this mixture over medium heat until the jaggery is completely dissolved. Strain the jaggery syrup to remove any impurities and set aside.

Step 3

In a separate pan, heat the coconut oil over medium heat. Add the cashew nuts and fry until they become golden brown. Remove them with a slotted spoon and set aside.

Step 4

In the same pan, add the raisins and fry for a few seconds until they puff up. Remove them and set aside with the cashew nuts.

Step 5

In a large pot, pour the coconut milk and bring it to a gentle boil over medium heat.

Step 6

Once the coconut milk starts boiling, add the softened flattened rice and mix well.

Step 7

Pour the jaggery syrup into the pot and stir continuously to combine all the ingredients well.

Add the cardamom powder and continue to simmer the mixture for about 5-7 minutes until the flattened rice is completely cooked and the flavors are well infused.

Step 9

Finally, add the fried cashew nuts and raisins. Stir gently to combine.

Step 10
