Ingredients

  • 500 g Chicken thighs, boneless and skinless
  • 60 ml Olive oil
  • 45 ml Lemon juice
  • 30 ml Red wine vinegar
  • 3 Garlic cloves, minced
  • 10 g Dried oregano
  • 5 g Ground cumin
  • 5 g Salt
  • 5 g Black pepper
  • 1 Cucumber, grated
  • 120 g Vegan yogurt
  • 15 g Mint leaves, finely chopped
  • 15 g Dill, fresh and chopped
  • 1 Tomato, sliced
  • 1 Red onion, thinly sliced
  • 4 large Lettuce leaves
  • 4 Pita breads, dairy-free
  • 500 g Potatoes, cut into fries

Directions

Step 1

In a bowl, combine olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, ground cumin, salt, and black pepper to create the marinade.

Step 2

Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Marinate for at least 1 hour in the refrigerator, up to 12 hours for best results.

Step 3

Preheat the oven to 200°C (390°F) for the fries.

Step 4

Spread the cut potatoes onto a baking sheet lined with parchment paper. Drizzle with olive oil and a pinch of salt. Roast in the oven for 25-30 minutes or until golden and crispy, flipping halfway through the cooking time.

Step 5

To prepare the dairy-free tzatziki, squeeze excess moisture from the grated cucumber. In a bowl, mix together the cucumber, vegan yogurt, finely chopped mint leaves, and dill. Add salt to taste and set aside in the refrigerator for flavors to meld.

Step 6

Preheat a grill or grill pan over medium heat. Cook the marinated chicken thighs for about 6-8 minutes per side or until they are fully cooked and have charred edges. Let the chicken rest for a few minutes before slicing into strips.

Step 7

Warm the dairy-free pita breads on a skillet or directly over a gas flame until slightly charred and pliable.

Step 8

Assemble the gyro platter by placing sliced chicken, crispy fries, tomato slices, red onion, and lettuce leaves onto each plate. Serve with warm pita and a generous dollop of dairy-free tzatziki on the side.

Step 9

Enjoy your Dairy-Free Authentic Greek Gyro Platter with family and friends!
