Ingredients

  • 2 cups Rolled oats
  • 1 cup Dried apricots
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Sunflower seeds
  • 0.25 cup Chia seeds
  • 0.25 cup Flaxseed meal
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Maple syrup
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.75 cup Unsweetened applesauce
  • 0.5 cup Raisins

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with coconut oil.

Step 2

In a food processor, combine the rolled oats and dried apricots. Pulse until the mixture resembles a coarse meal.

Step 3

Transfer the oat-apricot mixture to a large mixing bowl and add the shredded coconut, sunflower seeds, chia seeds, flaxseed meal, baking soda, and salt. Stir until well combined.

Step 4

In a small saucepan over low heat, combine the maple syrup, coconut oil, and vanilla extract. Stir until the coconut oil is melted and the ingredients are well combined.
