Ingredients

  • 2 pieces Large aubergines
  • 60 grams Tahini
  • 45 milliliters Lemon juice
  • 2 pieces Garlic cloves
  • 45 milliliters Extra-virgin olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 10 grams Fresh parsley

Directions

Step 1

Preheat your oven to 220°C (428°F) or prepare a grill for high heat.

Step 2

Pierce the aubergines several times with a fork and place them on a baking sheet lined with parchment paper.

Step 3

Bake or grill the aubergines for about 25-30 minutes, turning occasionally until the skin is charred and the flesh is soft.

Step 4

Remove the aubergines from the oven or grill and allow them to cool for a few minutes.

Step 5

Once cool enough to handle, peel the skin off the aubergines and discard it. Transfer the flesh to a sieve to drain excess liquid.

Step 6

In a food processor, combine the aubergine flesh, tahini, lemon juice, garlic cloves, olive oil, cumin, paprika, and salt.
