Ingredients

  • 500 grams asparagus
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 1 medium onion
  • 350 grams firm tofu
  • 3 tablespoons nutritional yeast
  • 1 cup unsweetened almond milk
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pre-made dairy-free pie crust

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Rinse and trim the tough ends off the asparagus. Cut into 1-inch pieces and set aside.

Step 3

Finely chop the garlic and onion.

Step 4

Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté for 5 minutes until translucent.

Add the asparagus to the pan and cook for another 5 minutes until slightly tender. Remove from heat and allow to cool.

In a blender or food processor, combine the firm tofu, nutritional yeast, almond milk, lemon juice, fresh parsley, salt, and black pepper. Blend until smooth.
