Ingredients

  • 3 cups cold cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 1 whole small onion, chopped
  • 3 whole garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 medium carrot, diced
  • 1 cup peas
  • 1 whole red bell pepper, diced
  • 2 stalks scallions, sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon black pepper
  • 0.25 cup chopped cilantro (optional)

Directions

Step 1

Start by preparing all your ingredients: chop the onion and red bell pepper, mince the garlic, grate the ginger, dice the carrot, slice the scallions, and if using, chop the cilantro.

Step 2

Heat the vegetable oil in a large, non-stick skillet or wok over medium-high heat.

Step 3

Add the chopped onion to the skillet and sauté for about 2 minutes until they become translucent.

Step 4

Stir in the minced garlic and grated ginger, cooking for another 30 seconds until fragrant.

Step 5

Add the diced carrot, peas, and red bell pepper to the pan and stir-fry for about 3-4 minutes, or until the vegetables start to soften.

Step 6

Push the veggies to the side of the skillet and add the cold cooked rice. Break up any clumps and allow it to heat through, stirring frequently.

Step 7

Once the rice is hot, stir the vegetables back into the rice and mix well.

Step 8

Pour the soy sauce over the rice and vegetables, stirring to make sure everything is evenly coated.

Step 9

Add the sesame oil and black pepper, continuing to stir for an additional 1-2 minutes to ensure all flavors combine.

Step 10

Remove the skillet from the heat and stir in the sliced scallions.

Step 11

Garnish with chopped cilantro before serving, if desired.

Step 12

Serve immediately and enjoy your flavorful, dairy-free arroz frito!
