  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large, sliced ripe plantain
  • 4 eggs
  • 2 tablespoons, chopped parsley

Directions

Step 1

Rinse the rice under cold water until the water runs clear, then drain well.

Step 2

In a medium saucepan, bring the water to a boil. Stir in the saffron threads and rice. Reduce heat to low, cover, and cook for 15-18 minutes or until the rice is tender and water is absorbed.

Step 3

While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
