  • 1 Cinnamon stick
  • 2 cups Water
  • 2 cups Coconut milk
  • 2 cups Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.75 cup Sugar
  • 1 teaspoon Ground cinnamon for garnish
  • 0.25 teaspoon Salt

Directions

Step 1

Rinse the Arborio rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, add the rice, cinnamon stick, and 2 cups of water. Bring to a gentle boil over medium heat.

Once boiling, reduce the heat to low, cover, and let it simmer for about 10 minutes or until most of the water is absorbed.
