  • 2 cups Dried apricots
  • 1.5 cups Water
  • 2 tablespoons Lemon juice
  • 1 teaspoons Vanilla extract
  • 1.5 tablespoons Cornstarch
  • 4 Fresh apricots
  • 0.25 cup Slivered almonds

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch tart pan with a removable bottom using coconut oil.

Step 2

In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.

Step 3

Press the dough evenly into the bottom and up the sides of the prepared tart pan to form the crust.

Bake the crust for 10-12 minutes in the preheated oven until lightly golden. Remove and let it cool completely.

In a medium saucepan, combine dried apricots, water, lemon juice, and vanilla extract. Bring to a simmer over medium heat.
