Ingredients

  • 2 cups Old-fashioned rolled oats
  • 1 cup Almond flour
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Pure maple syrup
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 1 Granny Smith apple, peeled, cored and diced
  • 0.5 cup Chopped walnuts

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with coconut oil or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, baking powder, and salt. Stir until well mixed.

Step 3

In a separate bowl, whisk together the unsweetened applesauce, pure maple syrup, vanilla extract, and melted coconut oil until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until fully combined. The mixture should be thick and sticky.

Step 5

Gently fold in the diced apple and chopped walnuts until evenly distributed throughout the mixture.

Transfer the oat mixture into the prepared baking dish, spreading it out evenly and pressing down lightly with a spatula to ensure it's compact and even.
