1. In a large bowl, combine all-purpose flour and salt.
2. Add the solid coconut oil and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.
3. Gradually add cold water, one tablespoon at a time, mixing with a fork until the dough comes together.
4. Divide the dough into two equal parts, wrap in plastic wrap, and refrigerate for at least 30 minutes.
5. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
6. In a medium saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for about 5-7 minutes until the apples are tender.
7. In a small bowl, dissolve cornstarch in 2 tablespoons of water, then add to the apple mixture. Cook for another 2 minutes, stirring constantly, until thickened. Remove from heat and let cool.
8. On a floured surface, roll out one portion of the dough to about 1/8-inch thickness. Use a 4-5 inch round cutter to cut circles from the dough.
9. Place a heaping tablespoon of the apple filling in the center of half of the dough circles. Lightly moisten the edges with almond milk.
10. Place another dough circle on top and press the edges together with a fork to seal.
11. Place the hand pies on the prepared baking sheet and brush with a little almond milk. Sprinkle with turbinado sugar for added crunch.
12. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
13. Remove from the oven and let cool on a wire rack. Serve warm or at room temperature.
