Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2.5 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Unsweetened almond milk
  • 0.5 cup Applesauce
  • 2 tablespoons Coconut oil (melted)
  • 1 teaspoon Vanilla extract
  • 1.5 cups Chopped apples (peeled and finely diced)
  • 4 cups Vegetable oil (for frying)
  • 1 cup Powdered sugar
  • 0.5 teaspoon Ground cinnamon for dusting (optional)

Directions

Step 1

In a medium bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.

Step 2

In a large bowl, combine the almond milk, applesauce, melted coconut oil, and vanilla extract. Mix until smooth.

Step 3

Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.

Step 4

Gently fold in the chopped apples until evenly dispersed throughout the batter.

Step 5

Heat the vegetable oil in a large, deep saucepan or Dutch oven over medium heat, until it reaches 350°F (175°C).

Step 6

Using a spoon or a small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.

Step 7

Fry the fritters for about 2-3 minutes per side, or until golden brown and cooked through.

Step 8

Use a slotted spoon to remove the fritters from the oil, and place them on a paper towel-lined plate to drain any excess oil.

Step 9

Once the fritters are cool enough to handle, dust them with powdered sugar and a sprinkle of cinnamon, if using, before serving.
