Ingredients

  • 200 grams Ground almonds (almond flour)
  • 200 grams Granulated sugar
  • 2 large Egg whites
  • 1 teaspoon Almond extract
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 30 grams Powdered sugar

Directions

Step 1

Preheat your oven to 170°C (340°F) and line two baking trays with parchment paper.

Step 2

In a large bowl, combine the ground almonds and granulated sugar until well mixed.

Step 3

In a separate medium bowl, whisk the egg whites with the salt until they are just frothy but not yet forming peaks.

Step 4

Gently fold the egg whites into the almond-sugar mixture using a spatula. Add the almond extract and the vanilla extract, mixing until you have a smooth, sticky dough.

Step 5

Scoop roughly tablespoon-sized portions of the dough and roll them into balls. If desired, dampen your fingers slightly with water to prevent the dough from sticking.
