Ingredients

  • 4 medium potatoes
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 large onion
  • 2 medium tomato
  • 1 tablespoon ginger-garlic paste
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons cilantro

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Finely chop the onion and tomatoes. Chop the cilantro for garnish.

Step 2

Heat the vegetable oil in a large pan over medium heat.

Step 3

Add the cumin seeds and mustard seeds to the hot oil. Allow them to splutter for about 30 seconds.

Step 4

Add the chopped onion and sauté until they turn golden brown, stirring frequently, about 5 minutes.

Step 5

Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.

Step 6

Add the chopped tomatoes and cook until they become soft and start to break down, about 3-4 minutes.

Step 7

Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 1-2 minutes to let the spices become fragrant.

Step 8

Add the diced potatoes and mix well to coat them with the spice mixture.

Step 9

Pour in the water, cover the pan, and reduce the heat to low. Let it simmer for about 15 minutes, or until the potatoes are tender.

Step 10

Once the potatoes are cooked, stir in the garam masala and cook for another 2 minutes.

Step 11

Garnish with chopped cilantro before serving. Serve hot with rice or flatbreads.
