Ingredients

  • 1 cup Almond flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Maple syrup
  • 1 tablespoon Coconut oil (for cooking)

Directions

Step 1

In a large mixing bowl, whisk together the almond flour, baking powder, and salt.

Step 2

In a separate bowl, beat the eggs and then mix in the almond milk, vanilla extract, and maple syrup until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.

Step 4

Heat a large non-stick skillet over medium heat and add a small amount of coconut oil to coat the pan.

Step 5

Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 2-3 minutes on one side, or until bubbles form on the surface and the edges look set.

Step 6

Carefully flip the pancakes and cook for another 2-3 minutes until golden brown on both sides.

Step 7

Repeat with the remaining batter, adding more coconut oil to the skillet as needed.

Step 8

Serve the pancakes warm with your choice of toppings such as additional maple syrup, fresh berries, or sliced bananas.
